Bacon & Mushroom Omelette

2 Large Eggs
2 Tesco Bacon Medallions
20g Red Onion
1 Babybel Light
25g Mushrooms
Spray Oil
Cracked Black Pepper
–
15g Cucumber
50g Pepper
25g Asda Baby Leaf Salad
10 Apertina Cubes
15g Blue Cheese Dressing
(Sainsburys – Be Good To Yourself)
Fry off Mushrooms, Onion & Bacon in separate pan
Mix 2 Eggs with a little Water
Lightly cook ONE side of Omelette, add some Black Pepper and turn it over then add toppings and finish cooking for 1-2 minutes
Simply fold over and serve
